I have always had a fear for banana bread after being force fed it when I was younger. However, this weekend I decided to have a go at making my own. I used coconut in mine, but this could be swapped for walnuts or pecans. For nut allergies you could use sunflower seeds or add a bit more oats as replacement.
ingredients:
2 over ripe bananas (mine were large)
2 eggs
2dl oats
1.5 dl wheat bran
1dl pea protein (you can use any suitable protein or add more wheat bran)
Stevia
1 tsp baking powder
mixed spice (cinnamon, nutmeg etc)
1.5dl shredded coconut and some spare for decoration
2 tbsp Walden farms caramel sauce (zero calories)
1 tbsp peanut butter (optional)
Preheat the oven at 180º
Use a blender to mix bananas and eggs
Add stevia depending on gow sweet you want it. Bananas can be very sweet, so you won't need much.
Mix all the dry ingredients, including coconut and spices, together and stir into the banana and egg mixture. If it is too dry add a little bit of water until you have the consistency of a wet/moist bread dough. Pour the mixture in a bread/cake tin.
Mix the walden farm syrup with peanut butter (optional) and spread on top of the cake. sprinkle over with shredded coconut.
Put the tin in the oven for approximately 30min or until you can pull a dry fork out of the cake.
The cake normally tastes better the day after its been made. Enjoy as a healthy snack or treat!
